We’ve been getting a veggie box since the new year, from a company called Greenling. They collect items from local farms and then deliver them to us, right now we get the box every other week. It’s been interesting, we eat more veggies and it forces us to get a bit more creative with them.
When beets came round I was not too thrilled. I’m am not a fan of them and I had to really strain to find a way to cook them in a way I’d actually enjoy.
In the end I settled for this chocolate beet cake, originially by Nigel Slater and adapted by David Lebovitz. I turned it into cupcakes and added a cream cheese icing, then used the extra beets to make some candied chips to garnish the top.
They were actually surprisingly good, better than I expected. The beets added an earthyness that really complemented the chocolate without it tasting strongly, or barely at all. They also added an incredible moistness, three days later they were still delicious!
